Why hot sauce passed ketchup

Hot sauce has overtaken ketchup, but the growth is coming from global flavor, not heat. Here is what the shelf data says buyers should notice.

Hot sauce is now America’s most-used condiment. Ketchup is No. 2.

Circana puts hot sauce eaters at 93% of the population. NielsenIQ puts the category at $261.8 million a year, up 4.7%.

Where is the growth coming from?

Not heat. The fastest growers are global chili condiments. Call it the Gochujang Rule: unfamiliar flavor, familiar food. It worked for gochujang on burgers. It is working for Indian flavor on wings.

We see it in buyer behavior, not just sales data. On RangeMe this fall, buyers searched snacks, vegan, frozen, and protein. Nobody is shopping for burn. They are shopping for new jobs for food people already eat.

Premium jars grow fastest of all. Shoppers are trading up on flavor, not heat.

What about dips?

Dips tell the same story in reverse. The category is down 1.2% overall. Global dips, muhammara and toum among them, are the part still growing.

Search behavior agrees. Yelp ranked Indian food its top trend for 2026, with Indian buffet searches up 459%.

Does it hold in frozen?

Frozen snacks are flat as a whole. Frozen global street food is $543.5 million, up 26% in two years, and samosas are up 32% (Conagra). One brand, Deep Indian Kitchen, does more than $100 million a year in frozen Indian (SPINS). The demand is proven. The shelf is not crowded.

What we make of it

We built Tuk Took Bites for that gap. Bombay Hot and Punjabi Tikka put Indian flavor on wings. Our Tandoori Vegan Mayo Spread puts tandoori flavor on sandwiches, wraps, burgers and fries. Both sauces carry 0g of sugar and 13 calories a serving.
